Parmesan Chicken and Mashed Potatoes never fail to please our whole family! The recipe I use time and time again is from Barefoot Contessa and from the very first time I tried it, it was a success. This time around, I added Garlic powder and Onion powder to the flour and I used a cast iron skillet to fry the chicken cutlets. It must have been both that made a difference to the chicken because they were so tasty, crunchy on the outside and perfectly cooked inside. Did I mention that I love my new cast iron skillet? I'll be using it all the time as from now on. I never was a big fan of cast iron skillets before for the simple reason that they are too heavy and can get rusty if you don't take good care of them.
So this past Sunday, I decided to make Parmesan Chicken, Mashed potatoes and Caesar salad for dinner. A great combination that is our family's favorite. It's been a long time since I made Mashed Potatoes simply because we are trying to cut down on carbs. But boy this Mashed Potatoes was soooo good! I made it with milk, butter and cream cheese. Then put it in the crockpot to keep warm until we were ready to eat. All of us definitely enjoyed the Sunday dinner!
