I'm sure you've realized by now that I am a big time snacker! I love my snacks any time of the day. I grew up on snacks (gajacks as we would say in mauritian language) and my sisters and I loved preparing them on Sundays. Some days it would be mini egg salad sandwiches, poudine mais (polenta pudding) or vermicelle (vermicelli) and other days it would be Lentils doux (sweet red bean soup) or gato frire (potato, bread or eggplant slices fried in batter). Salmon croquette is one of my all time favorite. It's very easy to make and great to bring to a pot luck. Serve with sweet chili sauce!

SALMON CROQUETTES
Pink salmon, canned
2 - 3 cups Korean pancake mix
1 tsp onion powder
1 tsp garlic powder
2 tsp salt
Water (enough to mix into a thick batter)
Spring onions sliced
Corn kernels, 1 15 oz can drained
Bell pepper diced
Mix all ingredients together and deep fry small balls until golden.
